Happy Valentine’s Day!!!

In just a few days, we will be celebrating the most romantic Holiday of the year – Valentine’s Day!  If you are wondering what you can do for your sweetie that would be fun, romantic and special, I would like to offer a few ideas.

The day of love, when we celebrate with hearts and chocolates with the special person in our lives – or if you are single, we call this Single Awareness Day.  Regardless, you can’t go into any store without seeing heart-shaped boxes of chocolates, Teddy Bears, bouquets of roses and greeting cards espousing words of love.  But you may be wondering what you could do for the one you love that might be a little more personal, special or different.

For the most personal and special, try writing a love letter to your significant other.  Rather than purchasing a card with verses created from the pen of a stranger, write your own instead.  You don’t have to be a poet, just write from the heart.  This makes the words more special because it’s personal and shows that you took the time to think it through and say things that you might not have ever said.

There is always the option of going out for dinner – whether to your favorite restaurant or to one you’ve always wanted to try.  Since many people will have that same idea, you may have a long wait if you didn’t make reservations.  Instead of going out, you could make dinner at home.  Now I realize this may not sound romantic or even fun, but you can make it special.  Select a menu consisting of items that the two of you can make together.  Pour a glass of wine, put on some music and share the tasks for preparing the delicious meal.  Or, for an extra special meal that is created using some amazing products from my favorite specialty Olive Oil and Balsamic Vinegar store, Branch and Vine, try out the recipes below created by store owner, Tracey Jenkins.  You can purchase many of the products in the recipes at Branch and Vine located in Newnan and Peachtree City.  

Chipotle-Serrano Rib-Eye Steaks

Ingredients :

Four  8-10 oz. Rib-eye steaks

1/2 cup Branch & Vine Serrano Honey Vinegar

1/2 cup Branch & Vine Chipotle Olive Oil

1 Tbsp. h.e.r.b Steakhouse Seasoning (available at Branch & Vine)

Directions

Combine vinegar and Steakhouse Seasoning. Slowly whisk in olive oil.  Place steak in a zip lock bag or in a single layer non-reactive pan or container. Pour the marinade over the streaks and massage marinade into steaks. Cover and refrigerate, allow in marinate for a minimum of 2 hours or up to 6 hours.

Prepare a medium charcoal or gas grill and cook to desired doneness. Allow to rest for ten minutes before serving.

Serves 4. (The left-overs will be great the next day)

Asiago & Truffle Mashed Potatoes

Ingedients :
3 pounds Yukon Gold (or red skinned) potatoes, unpeeled
1 Tbsp Branch & Vine Butter Flavored Olive Oil
2 Tbsp Branch & Vine Garlic Infused Olive Oil
2 Tbsp unsalted butter
1 medium clove garlic
1/2 cup half & half, plus extra if needed  (low or no-fat is ok)
1/2 tablespoon Branch & Vine Black Truffle Oil
1/2 cup freshly grated Asiago Cheese, plus a little for finishing sprinkle
1 Tbsp Pacific Ocean Sea Salt (for boiling water) (available at Branch & Vine)                   
Sel Gris or Pink Himalayan s.a.l.t. & (available at Branch & Vine)  / fresh cracked black pepper to taste
Optional:  Finely chopped, fresh flat leaf parsley for garnish

Dice potatoes, making sure all are relatively the same size.  Place in a large saucepan add the Pacific Ocean salt, and cover with hot water.  Bring to a boil over medium-high heat and then reduce heat to maintain a rolling boil.  Cook until potatoes are tender throughout when poked with a fork.  Heat the half-and-half, oil, butter and the garlic in a medium saucepan over medium heat until simmering, watching carefully so it doesn’t scorch.  Remove from heat and set aside.  Remove the potatoes from the heat and drain off the water.  Mash and add the garlic-cream-butter mixture, grated Asiago and truffle oil.  Stir to combine, adding extra half & half if too dry.  Salt and pepper to taste.  Let stand for 5 minutes so that mixture thickens.  When ready to serve, drizzle extra olive oil over the top and sprinkle with grated Asiago and fresh parsley for garnish.

 

 Asparagus with Roasted Tomatoes, Balsamic Reduction and Goat Cheese

Ingredients :
1 lb fresh asparagus, washed and tough ends removed
1 pk grape tomatoes, 1/2 cut in half lengthwise  and leave other 1/2 whole
2 Tbsp + 2 Tbsp Branch & Vine Garlic Infused Olive Oil  (could also use Branch & Vine’s Lemon or Persian Lime Oils)
1 tsp + 1tsp Fleur de Sel or Sel Gris s.a.l.t. (available at Branch & Vine)
Mild goat cheese  (can sub with feta if you like it beta)
freshly ground pepper to taste
3/4 cup Branch & Vine Serrano-Honey Vinegar, reduced by 1/2   (you can substitute with several others, such as Traditional)
Directions
  • Preheat oven to 300F.
  • In small mixing bowl, toss whole tomatoes, 1 Tbsp Olive, 1/2 tsp s.a.l.t. and a sprinkle of pepper to coat well.  Pour tomatoes onto parchment paper lined baking sheet (make sure to get all the oil too!)  Bake at 300 degrees for approx 30-40 minutes. You want them blistered slightly but not bursting.   Once they are in the oven… 
  • Place Serrano-Honey Vinegar in sauce pan and heat on low to med-low.  Do not allow to boil! Simmer until reduced by 1/3 to 1/2.   Remove from heat.  It will continue to thicken as it cools.  You want syrup consistency.  If it is too think once it cools, you can return to very low heat and stir in a little extra, non-reduced S-H Vinegar.  (Don’t get frustrated, it takes a few times to know when to remove it the first time)  This can also be done a day or two before!
  • Toss the halved tomatoes as you did with the whole and set aside.
  • Pat asparagus dry. Place on parchment lined baking sheet in single layer to one side, then drizzle with 2 Tbsp of olive oil to coat well.  Sprinkle with salt and pepper.  Add the halved tomatoes on the other side of baking sheet.  
  • When whole tomatoes have been in the oven for 20 minutes, put the asparagus and halves in for the last 20 minutes.  Cook until the asparagus just barely begin to get wrinkled.
  • Remove pans as they are finished.  Arrange asparagus and halved tomatoes on platter or plates, crumble cheese on top and then drizzle with reduction.
  • Use whole tomatoes as a plate garnish next to your steak and potatoes.

 

Don’t want to cook, then how about ordering a meal from your favorite gastro pub and take it home, plating it up, setting the table with nice linens and candles and enjoy it in the privacy of your home.  There is nothing wrong with serving pre-made items – reduces the mess, but can still be tasty.  You can find prepared items at your local grocery store or a gourmet market.  Don’t forget the wine and/or champagne.

Many couples find Valentine’s day a perfect time to stay overnight in a hotel.  You can arrange to have a rose-petal turn down and champagne and chocolates delivered to your room for that special touch.  If you decide to stay at home, turn your bedroom into a special escape by placing lighted candles around the room, place rose petals as a path to the bedroom and the bed.  Have a chilled bottle of champagne waiting and maybe even serve dessert.  Take a bubble bath together – just relax and enjoy each other!

Valentine’s Day Ideas ~ Couples Edition

Earlier this week I provided ideas for a Girlfriends/BFF Valentines Day but since the main focus of Valentines Day is COUPLES here is a post to give ideas to those couples who may not have decided how to celebrate with the one they love!

Of course, you can always go out to dinner – but let’s face it, sometimes the crowds can be a deterrent.  Why not have a night-in instead, cook a meal together and then watch a Romantic movie.  Cooking a meal together can be romantic and curling up on the couch with your sweetie to watch a romantic movie can be a wonderful way to celebrate the day of LOVE.

To help you along with the plans, I’ll provide a wonderful meal option and my top 25 Romantic movies.

Here’s a menu that was developed by Chef Dean Sheremet as shown on the CBS show, The Talk.  Incorporating chocolate into each course not only provides delicious flavor, but adds a little touch of the  unexpected which is perfect for a special meal!

Cocoa and Coffee Encrusted Steak with Chocolate Chipotle BBQ Sauce and Frizzled Onions

Cocoa and Coffee Encrusted Steak with Chocolate Chipotle BBQ Sauce and Frizzled Onions

Cocoa and Coffee Encrusted Steak with Chocolate Chipotle BBQ Sauce and Frizzled Onions

2 6-8 ounce steaks of your choice, filet or rib-eye work great

Grapeseed or high-heat cooking oil

2 Tablespoons unsalted butter

1 Sprig of rosemary

1 clove of garlic, smashed

Chocolate chipotle BBQ sauce (recipe below)

Rub

1 Tablespoon black peppercorns

1 Teaspoon kosher salt

1 Teaspoon espresso powder

1 Tablespoon cacao nibs

Frizzled Onions

1 Spanish onion, shaved 1/8 in. thin on a mandoline

2 cups Buttermilk

1 cup all-purpose flour

1 Teaspoon kosher salt

¼ teaspoon cayenne pepper

3 cups grapeseed or high temperature oil

  1. Pre-heat the oven to 500 degrees, place rack in center position and set a half sheet tray with a wire rack inside
  2. Bring your meat out to temper about 30 minutes before you start cooking
  3. Tip the rub ingredients into a mortar and pestle and grind them until the peppercorns and nibs are coarse, not too fine
  4. Add the sliced onions to a container just large enough to hold them and pour the buttermilk over them, making sure they are completely submerged
  5. In a large bowl, whisk together the flour, salt and cayenne and set aside
  6. Heat the 3 Cups of oil in a medium saucepan until it reaches 350 degrees
  7. Add 3 Tablespoons oil to heavy skillet set over high heat
  8. Generously coat the meat on all sides with the rub
  9. When the oil is just about to smoke, add the steaks to the pan and cook 2-3 minutes on each side until a nice crust develops
  10. Add the butter, rosemary and garlic to the pan, tip the pan toward you and gently baste the meat in the flavored butter for about 30 seconds
  11. Remove the meat from the pan and place it on the wire rack in the oven
  12. Transfer the steaks to the oven and cook about 4-5 minutes more for medium-rare – flipping the meat halfway through. Check for doneness and allow the meat to rest on a cutting board at least 5 minutes before carving
  13. While the meat is resting remove a handful of the onions and shake off the excess buttermilk, dredge in the flour mix, being careful they don’t clump up
  14. Fry until golden brown, (this happens very quickly) and drain on a plate lined with paper towel
  15. Place the steaks on a plate and top with a heap of frizzled onions and a healthy amount of barbecue sauce

Chocolate chipotle BBQ sauce

1 Tablespoon olive oil

3 Cloves garlic

1 Cup of Chocolate stout (any stout will work fine)

1 Teaspoon Onion powder

1/3 Cup Low sodium soy sauce

2/3 Cup Ketchup

1 Tablespoon of Worcestershire sauce

1 Chipotle in adobo with 1 ½ Tablespoons of sauce, minced

1/3 Cup brown sugar

1 ½ ounces of dark chocolate, chopped

  1. Heat the oil in a saucepan and gently cook the garlic until golden brown
  2. Add the remaining ingredients and simmer for 30 minutes or until the sauce is very thick
  3. Using a mesh strainer, strain the sauce into a clean jar
  4. The sauce will keep a week in the fridge.

Vinaigrette

1 ½ Teaspoons of cacao nibs

1 ½ Teaspoons of unsweetened cocoa powder

1 Teaspoon fluer de sel

½ Teaspoon fresh ground pepper

3 Tablespoons balsamic vinegar

1 1/2 Teaspoons honey

3/4 cup extra virgin olive oil

Combine the nibs, cocoa powder, salt and pepper in a mortar and pestle or spice grinder and grind into a fine powder

In a bowl or old jam jar, combine the powder with the oil and vinegar and whisk or shake well to combine

This dressing will keep about a week in the fridge

Salad

4 cups of spring mix greens

2 tablespoons tarragon leaves

2 Tablespoons dill leaves, chopped

1 grapefruit, peeled and segmented

1 ruby-red grapefruit, peeled and segmented

1 navel orange, peeled and segmented

1 blood orange, peeled and sliced into disks

In a large bowl, gently toss the greens with just enough vinaigrette to coat them

Arrange on a plate with the citrus and herbs finish with an extra drizzle of the dressing over everything

Chocolate Chocolate Chip Cookies with Salted Caramel Drizzle 

Whenever I bake I always measure by weight for absolute accuracy. “Chef Dean Sheremet”

I normally use a #40 scoop, which is about 1.5 Tablespoons, but feel free to play with the size.

  • 275 grams All purpose flour
  • 75   grams Unsweetened Cocoa Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 200 grams Dark Brown Sugar
  • Teaspoon of salt
  • 8 ounces unsalted butter at room temp
  • 100 grams of white sugar
  • 2 large Eggs, at room temperature
  • 340 Grams of Bittersweet Chocolate chips
  • 1/2 cup of pecan pieces
  • 1 teaspoon of vanilla extract

1. Preheat the oven to 350 degrees

2. In a large bowl, Combine the flour, cocoa powder, Baking soda and baking powder

3. In a stand mixer, cream the butter and sugars and salt until light and fluffy about 5 minutes

4. Add eggs one at a time, letting each one incorporate before adding the next

5. Add the vanilla extract

6. Lower the speed of the mixer and add the dry Mixture in 2-3 batches

7. Fold in the chocolate chips and pecans with a spatula

8. Roll the dough into balls and bake for 9 minutes, rotating halfway through

9. Drizzle with the sauce after it has cooled

Caramel Sauce

1 cup sugar

2 Tablespoons corn syrup

¼ cup water

1 cup of heavy cream

½ vanilla bean, split and scraped into the cream

¼ cup Greek yogurt

1 Teaspoon fleur de sel

  1. Heat the sugar, syrup and water in a saucepan until it becomes dark amber in color, about 6-8 minutes or until it registers 350 degrees on an oil thermometer. Taking care to brush the sides down with a wet brush so the sugar doesn’t burn as it bubbles up
  2. Heat the cream and the vanilla bean in a separate pan until just below a simmer (do not allow it to boil over)
  3. Once the sugar has come to 350 degrees, remove the vanilla pod from the cream and gently pour the cream into the sugar mixture. It will bubble like crazy, but keep stirring with a heat safe spatula or wooden spoon
  4. Once the mixture has cooled a bit and is smooth, whisk in the Greek yogurt until completely emulsified
  5. Pour into a large glass jar
  6. Keeps about a week, but it won’t last that long

 

Once the meal is prepared, plate it up, pour a glass of wine and enjoy!!

Now that your stomach is full, it’s time to pop a movie into the DVD/Blu-Ray Player and sit back, relax, share a laugh or even a tear and relish in being with the one you love!  It would be my recommendation to have some snacks available to munch on during the movie(s).  For me that could include, popcorn, Peanut M&M’s or more of the delicious Chocolate, Chocolate Chip Cookies!
